I had many people ask for the recipes so I figured I'd post them in one big blog post for any to see that wanted. :)
Garden Fresh Salsa
I'll be honest - I don't have an exact recipe for this. I just throw stuff together and keep adding until it looks/tastes right. So here is a rough estimate of what I do:
Ingredients
- 1 Small onion
- Cilantro
- Green Onion
- 1-3 Peppers (I used 2 pablano's and 1 jalepeno because that is what I had in my garden)
- Tomatoes (I used about 10 small tomatoes from our garden. Again, keep adding until it tastes right to you)
- Minced Garlic
- Cumin
- Salt
- Lime juice
Directions
Place everything but tomatoes in food processor (I do about 1 tsp of each of the spices, garlic, and lime juice), chop up to your desired "chunkiness" (I like mine pretty chopped). Add in the tomatoes and continue to pulse the machine until they are mixed in well. Taste. Adjust seasons/ingredients if needed. Enjoy!
Paleo Spicey Sweet Potato Hash

I do make some adaptions to it:
- I never use the oil, I never need it. I suppose it depends on your cookware and your beef.
- I tend to do more like 3 medium sweet potatoes rather then 2. I always shred them in our food processor.
- I use one small onion rather then a medium.
- I about triple the amount of spices. (basically I do 1 tablespoon rather then a teaspoon).
- I add in 1-2 jalapenos shredded in with the sweet potatoes.
- I also add a dash of cayenne pepper.
- Also I have no idea why they think it only takes 8-10 minutes to cook. It takes me about 20-25. I will put a lid on it and let it sweat at a medium heat for about 10-15 minutes, and then take the lid off, put the heat on medium high-high and continue to stir until it starts to crisp a little.
It's a pretty easy dish to make (though you will want a pretty big pan to cook it in) and super yummy - even Rose loves it!
Paleo Fruit Snacks

Again I do make a few slight adaptions:
- I usually end up doing a full cup of fruit. I like my fruit snacks super fruity.
- I always use lemon juice (just from a bottle) not orange - we did the orange juice once and didn't like it near as much.
- Before mixing in the gelatin I always had about 2 tsp of vanilla. I love me some vanilla. :)
Almost Paleo Granola
I call this almost paleo because it doesn't involved any refined sugars... but it does have oats, which is technically not Paleo. We love using this granola with some full fat greek yogurt and berries. I know we adapted it from some recipe online, but I don't remember which site unfortunately to give credit to as I just saved the recipe to a notebook in my phone.
Ingredients
- 1/2 C pecans
- 1/4 C walnuts
- 1/4 C almonds
- Sprinkling of flax seeds
- 1/4 C water
- 1/2 C All Natural Pure Maple Syrup (we just get this from Costco)
- 1/4 C honey
- 1/4 C coconut sugar
- 5 teaspoons vanilla
- 4.5-5 cups of oats
- Cinnamon
Directions
- Preheat oven to 275 degrees
- Chop nuts together in a blender or food processor. (I always keep some chunks in there)
- Combine water and "sugars" in a bowel and microwave for 30 seconds or until sugar is desolved.
- Add vanilla to sugar mixture.
- Combine nuts, sugar mixture, and oats. Mix real well so that all the oats and nuts are covered.
- Place parchment paper on a cookie sheet.
- Spread the mixture on the cookie sheet.
- Sprinkle cinnamon to your desire on top of mixture.
- Cook for 45 minutes. Stir the mixture and cook for 10 more minutes.
- Let cool until crunchy on the pan.
Totally Not Paleo Chocolate Chip Cookies
You guys - these are some of my favorite cookies to make. This recipe comes from my wonderful sister Robin (again whose blog is thankyourbody.com). These are our go-to cookies when we decide to make some. Sorry I have no link to the recipe, but just have it type on a piece of paper. Here it is:
Ingredients:
- 3/4 C unsalted butter, softened
- 3/4 C brown suer
- 1/4 C granulated sugar
- 1 egg
- 2 tsp. vanilla extract
- 2 C all purpose flour
- 2 tsp. cornstarch
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup of chocolate chips of your choosing (we do half milk chocolate and half white chocolate)
Directions
1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper (and trust me the parchment paper makes a huge difference).
2. In the bowl of a stand mixer (I've used a hand mixer before), cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
3. Mix in flour (gradually), cornstarch, baking soda, and salt.
4. Stir in chocolate chips.
5. Using a standard sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.
6. Bake for 8-10 minutes, until the edges are barely golden brown. The tops will not be brown but they will finish cooking on the sheet.
7. Let cool on the pan for 5 minutes and then remove from the baking sheet and let cool completely.
